超级松软蒸香蕉小蛋糕 Steam Banana Cake

我已经在这个星期内制作了这个muffin小蛋糕两次了。。。哈哈,是不是很好奇为何一个星期里要弄两次?!其实答案很简单,就是。。。这个蛋糕超好吃,超级松软!:) 真的没骗你们哦,有图为证。。。

这个muffin除了超级松软外,也很香甜,香蕉的香甜在口里散发出来,吃了一口赶紧又想再接一口。说实在的,我从来都没有吃过这么松软的muffin,原食谱也说这个蛋糕超松软,可是真的没有想过会如此出付意料的松软。喜欢香蕉muffin的朋友不要错过这款蒸式muffin,真的物有所值哦!

材料 Ingredients: (12个小马芬 12 small muffins)
两粒鸡蛋   2 Eggs
100克砂糖   100g sugar
两条熟香蕉,压烂(200克)   2 ripe bananas, mashed (200g)
150克自发面粉   150g Self-raising Flour
1/8茶匙小苏打   1/8 tsp Baking Soda
75克食油(任何一种)   75g oil (any flavorless oil)

做法 Steps:

1)自发面粉和小苏打一起过筛后待用。Sift together self-raising flour and baking soda, set aside.

2)在碗中,把鸡蛋和砂糖搅拌至缎带状态。 In a mixing bowl, whisk together Eggs and sugar till ribbon stage. 

3)加入压烂的香蕉,搅拌均匀。Mix in mashed bananas, beat till combine.

4)小心的拌入混合好的面粉和食油,不要把蛋糊给弄塌。 Gently fold in flour mixture and Oil, taking care not to deflate the eggs and sugar mixture.

5)把面糊倒进马芬模里。Pour Batter into muffin pan, lined with muffin cups.

6)用大火蒸15分钟或熟透,把一根牙签插进去拿出来时是干净的就表示熟透了。Steam over high heat for 15mins or till an inserted skewer comes out clean.

注 p/s:

缎带状态(ribbon stage) 是指蛋糊打至颜色变浅,体积增大,蛋糊液滴下去,痕迹要停留1-2秒才消失。

      u’re welcome, just sharing only, no need so 客气嘛!I got the recipe for steam carrot muffin, but hvn’t try to make, cos i dun hv some of the ingredients, if u wanna try i can send to u later.🙂 baking is fun hor..haha
