Tuna Potato Croquettes 金枪鱼马铃薯饼

很久之前已经想制做这个了,只是不知什么原因把它给搁下了。。。一直到星期一时才想起,赶紧到超市买好材料。 原本的食谱是把所有A和B料混合做成可乐饼那样的,我把它改成用马铃薯泥包裹着金枪鱼馅,还加入我喜欢吃的青豆。至于加入起司则是在制做前刚好看到一位便当朋友,Sonoma Bento给的贴士,加入了起司让薯饼有起司味,更加好吃。

Ingredients 材料:

(A)

  • 2 potatoes, boiled, peeled and mash     2粒马铃薯,煮熟,去皮和压烂
  • 1/2 teaspoon pepper     1/2茶匙胡椒粉
  • 1/2 teaspoon salt to taste     1/2茶匙盐

(B)

  • 100g tuna flakes in water, drained     100克罐装金枪鱼片,沥干
  • 1 onion, chopped     1粒大洋葱,切碎
  • 50g green peas (can), drained     50克罐装青豆,沥干
  • cheese, grated     适量起司,刨碎
  • thousand island sauce     适量千岛酱

(C)

  • 1 tablespoon corn flour     1大匙玉蜀黍粉
  • 4 tablespoon plain flour     4大匙白面粉
  • 5 tablespoon breadcrumb     5大匙面包糠
  • 1 egg, beated     1粒鸡蛋,打散

Method 做法:

1) Mix A together.  将A混合。

2) Mix B togther.  将B混合。

3) Mix the corn flour and plain flour.   混合玉蜀黍粉和白面粉。

4) Take mixture of A and put in mixture B as filling. Form into shape, first coat with flour then dip in egg and finally coat with breadcrumb.  拿少许混合物A包入少许的混合物B。  做成喜欢的形状,沾上面粉,然后沾上蛋液,再沾上面包糠。

5) Heat oil in pan, deep-fry the croquettes until golden brown. Dish out and drain.  烧热油,将金枪鱼马铃薯饼炸至金黄色,捞起沥干油份。

6) Serve hot with chilie sauce or mayonaise/thousand island sauce.  趁热配上辣椒酱或美乃至/千岛酱食用。

心得:

1)原本的食谱只是把薯饼做成扁球形。为了让孩子们喜欢,我用了心形和花形模做成心形和花形的薯饼,制做时稍微麻烦。。可是炸出来的效果还蛮漂亮。

2)用温热的油把薯饼炸熟后,再大火稍微炸一下以逼出里面的油份。

3)炸的时候要注意,面包糠很快便金黄色和黑。

4)馅料可以随意,鸡肉、虾肉、牛肉或猪肉都可以,不过要把这些材料炒熟才包裹。大洋葱可以先炒香才混合,我懒惰没有炒就混合了,补过还不错,吃得时候大洋葱刚刚熟透,还可以“感觉”到它。
